Since simple vegetables rediscovered their place to viral dessert hits and worldwide appeal on every dish, these are 9 food trends that will take off in the city in 2026. 

  1. Cabbage Takes Centre Stage

Kale and cauliflower should move aside, cabbage is the official vegetable of 2026. The chefs of Dubai, both professional and amateur, are highlighting the versatility of the delicacies, be it charred or fermented, quick- pickled, or thrown into a colorful salad or bowl. It is now a new menu and Instagram feed addition in the Dubai food scene that is gaining popularity because it is affordable, healthy and aesthetic. 

  1. Health First But Not Boring.

Plates that are calorie-conscious and do not compromise on flavor are to be expected. Consider bowls full of fiber, whole grains, legumes and imaginative vegetable dishes that taste decadent but are well-balanced. The Dubai food scene is also increasingly concentrating on food that is good to the body and thrilling to eat.

Following several years of lavish serving and sophisticated dishes, 2026 is welcoming the simplicity and ingredient-based cuisine. Chefs prefer flavours to speak themselves – leaves of quality produce, herbs, and spices. This is indicative of a larger change in spectacle to the substance of the UAE dining industry.
